Yes, but not too fresh. Here's why. Whaaaaat!
Immediately after roasting coffee, the beans begin to release C02 and are degassing. If you grind and drink the coffee before this process is complete, you will not get a very full flavor. The degassing completion time can vary by many factors including the type of bean and how it's roasted, so a good rule of thumb is to wait for about 7 days from roasting before you brew.
I have found that with our roasts, at least 5 days minimum before brewing. To keep it simple for our customers, we try to time the delivery date of our shipments to arrive so your order will be ready to brew the day after you receive it.
